Hi I've just rebuilt the top end of my nsr 125, went to start it to run it in but I'm not getting any spark, suspect I need a new stator, will cranking my bike with it not starting damage the new cilynder or rings as they haven't been run in?

No damage from cranking unless there is combustion. Though you will burn your starter with long cranking. Make sure to be connected to a 12V power supply (a connection to a car battery for example is smart).

Lack of spark is most likely a pintched wire, bad connection or kilsswitch being active (grounding the coil). It can be either from the switch it self, a side stand kill (if it has it) or anything alike. It would be very uncommon for rotor to go bad when not running unless it has been dropped or mechanicaly damaged in other way.
